Family Tradition of Italian Cooking Inspires Healthy School Lunches

Student chef Gabrielle Arma was inspired to cook by her family's love of Italian food. Coached by her grandmother, Gabrielle's favorite activity growing up was to help make a family dinner each week.

As a part of West High School's winning team at the 2014 Cooking up Change competition in Wichita, Kansas, her team re-created a healthier version of her favorite restaurant dish, Buffalo mac 'n cheese. The team combined this comfort-food main course with a veggie coleslaw and pear crisp with granola for a healthful, complete student lunch that meets the nutrition standards and budget limits that schools follow every day.
